So, what is the difference between mezcal and tequila I hear you ask?

We’ve put together a simple guide below: 

TEQUILA

MEZCAL

Can only be made using blue agave

Can be made using any one of 30 different types of agave plant

Strictly regulated

Not strictly regulated which leads to a very large variety of flavours and styles available

Produced primarily in Jalisco (or one of 4 other approved states)

Produced primarily in Oaxaca (or one of 7 other approved states)

Agave cooked, fermented and distilled

 

Usually cooked in industrial above ground ovens

Agave cooked, fermented and distilled

 

Usually cooked in underground pits lined with volcanic rock fuelled with burning wood and covered with dirt leading to it’s smoky flavor

A form of mezcal

Not a form of tequila
